Hey bine - LOVE the street chicken cart story! I think the situation is similar in China - there are vendors who have carts to sell food on the street, often ambiguous meat dishes of unknown composition. The way I see it - when in China, I veto food from any establishment that doesn't have a permanent address.
I've also found the chicken in China to be lackluster in general. Chicken dishes usually come with hidden surprise pieces of bone and are usually undercooked. They like their chicken chewy.
